Beety Carrot Juice

If you'd like to try a new twist on an old favorite ... add a beet the next time you make carrot juice in your juicer.

It add a beautiful red tinge to the drink and adds lots of healthy extras to your yummy drink.

Beets are a unique source of phytonutrients called betalains. Betanin and vulgaxanthin are the two best-studied betalains from beets, and both have been shown to provide antioxidant, anti-inflammatory, and detoxification support. In a recent study from Italy, beets were shown to be an especially important contributor of two carotenoids in the overall diet: lutein and zeaxanthin. Although much of the recent carotenoid research has focused on beta-carotene, both the lutein and zeaxanthin found in beets are unique as health support molecules, particularly with respect to eye health.

Green Peppers

Roasted Red Christy Sweet Pepper Salad

Roast desired number of peppers in oven until turning brown and skin is blistered, then place in a paper bag for 5 minutes. Peel and slice.

Add to taste: olive oil, vinegar, a little sugar, and fresh garlic. Optional: green olives, black olives, salami, fresh parmesan cheese.

This salad is perfectly pairied with our Pinot Grigio/Chardonnay Blend!

Thanks to Krueger Pepper Farms for this yummy recipe !

Use Delicious Sweet Corn ... grown in the Yakima Valley !

Corn of the Knights of the Ping Pong Table*

4 ears of fresh corn
zest of one lime
1Tbsp. lime juice
1/2 cup heavy cream
1 pinch of cayenne pepper
3 Tbsp. finely chopped chives
3 Tbsp butter

Cut uncooked kernels from corn cob into bowl. Scrape each cob with the back of a butter knife to get the residual corn "milk" into the bowl. In large frying pan, melt butter. Add corn to pan and cook for 2-3 minutes, stirring occasionally. Add cream, cayenne, lime juice and zest. Cook for an additional 5-10 minutes - not too long as you don't want soggy corn. Remove from heat into serving bowl and sprinkle with chopped chives. Delicious side dish!

*This delicious corn side dish got its name from a dinner where John Longfield served the dish to 12 guys who sat around the Ping Pong table for dinner when it was introduced.

Pairs beautifully with Piety Flats Pinot Grigio/Chardonnay and or Chardonnay
