Tieton Cherries have a wonderful favor because part of the parentage is Bing. This 1 and 1/2 inch (golf ball size) beauty is dark burgundy in color with a mouthful of nectar-like juice.

Rainier Cherries are the "Gold Nuggets" of the Yakima Valley. Their sugar levels can reach as high as 24 brix. The yellow flesh has a hint of candy apple red color on the skin; you can see the sugar dot or freckles when the cherry is ripe.

Bing Cherry Salsa

1/2 lb. bing cherries, pitted and chopped
1 Tbsp. lime juice
1/4 cup cherry preserves
1 glove garlic, chopped
1 Tbsp. minced red onion
1 Tbsp. finely chopped jalapeno pepper
1 Tbsp. finely chopped cilantro

Combine all ingredients in medium bowl and stir to blend.  Cover and chill for 1-2 hours to blend the flavors.  Serve on grilled meat or as a dip with chips.
